Chicken Stuffed with Crab Meat and Cream Cheese Plus Mushroom Sauce

So, I decided to make something that we haven't done at home before. Few days ago, I heard from a friend that he saw a recipe online about Chicken stuffed with Crab Meat. Being the curious, trying-to-learn-how-to-cook person that I am, I decided to give it a shot. So, I did a grocery shopping in the afternoon and come  dinner, I was ecstatic to cook! With Mom's help, we tried it out but had to do some changes on the ingredients since not everything on the recipe is available in the grocery store. Here's the original recipe:

Ingredients

  • 3 ounces cream cheese, softened
  • 2 tablespoons minced onion
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon chopped fresh dill
  • 1 teaspoon minced garlic
  • 1/8 teaspoon lemon pepper
  • 4 ounces fresh Dungeness crabmeat
  • 4 skinless, boneless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 3 cups fresh bread crumbs
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil

Directions

  1. In a medium bowl combine the cream cheese, onion, parsley, dill, garlic and lemon pepper. Add crabmeat and mix thoroughly. Season with salt and pepper to taste. Cover and chill in refrigerator (can be prepared 2 hours ahead).
  2. Using a small sharp knife, cut in half horizontally through the center of each chicken breast half, creating a pocket. Fill each pocket with 1/4 of the crab stuffing. Then dip each chicken piece into flour, eggs and finally bread crumbs to coat. Cover completely.
  3. In a large skillet melt butter or margarine with oil over medium heat. Add filled, breaded chicken breast halves to skillet and saute until golden brown and cooked through (juices run clear), about 10 minutes each side. Remove from skillet, drain on paper towels and serve.

Yummy right? Wondering what the sauce on top is? 
Mushroom sauce with parsley and button mushrooms!

It tasted really good and I served it with sweet carrots and corn! :) It's really interesting to cook this because you can never tell how the chicken's taste will match that of crab meat. I mean, I used to eat chicken and crab soup but chicken stuffed with crab meat and cream cheese is a different thing. I will try to make more dishes like this! :)

Grilled Shrimp and Salmon Belly in Butter

Yesterday, my sister was here at home. Since she seldom goes home because her work is in Zambales, I decided to cook for her ( ofcourse, with the help of Mom ). I bought shrimp and salmon belly the other day so I can cook something for the Holyweek. Here are some pics :)

Spicy Tuna Pasta

Cooked something different today. I have tried this pasta along time ago. I know it tastes good and I wanted to share with the family how good this one is. So, I asked Mom to come with me to the grocery store and shop for the ingredients. It's a Holyweek in the Philippines and I don't have work today so I think this dish is just perfect!

So yeah, the title says it all. :) I tried to fry chicken again, this time, using butter. So far, it was good but still plain ordinary. Still wondering how I can make good fried chicken. hmmm...

Sweet and Spicy Fish Fillet

I decided to try cooking fish last night. It was my first time. Quite tough as I didn't know that fish was more "delicate" than chicken. Anyway, I was craving for sweet and spicy, asked Mom how to do it.. and so here are the pics!

The taste was perfect! I thought it was going to be an epic fail but glad it wasn't. I got nervous since I don't want it to be too spicy and also, it was really hard to turnover the fish! But thanks to Mom... she really helped me finish this! hihihihihihihihi :)

Crispy Fried Chicken

Crispy Fried Chicken is one thing I really want to master. I know it sounds simple to just fry lean chicken but my challenge is to make something extraordinary out of it. So now, I'm starting just by simply learning how to fry chicken.

First Time To Cook

I decided to try cooking for the first time. I used to know how to cook hotdogs, eggs, pancakes and rice. But just those.
